Top Chef's 12th episode of its 22nd season was titled "Foraged in Fire." It saw the Top 5 compete one last time in Canada, with one chef just missing out on a trip to the finale in Milan, Italy.

What was the Elimination Challenge on Top Chef season 22, episode 12?
After everyone raised a glass to Lana Lagomarsini, the last contestant eliminated from the competition, whom everyone really liked, they headed out to the woods for their final Elimination Challenge. There was no Quickfire Challenge this week.
The guest judges were Cree Knowledge Keeper of Traditional Medicine and owner of Mahikan Trails Brenda Holder, and Master Forager Chef Tracy Little. They helped the chefs forage for ingredients in the Canadian wilderness where they found juniper, yarrow (a good rosemary substitute), mustard and dandelion roots, thistle, clover, rosehips, and even thatching ants, which rather shockingly taste like lemon, apparently.
After foraging, the chefs were allowed to shop for extra ingredients back in Calgary, then the next day, they had to cook outside over an open flame. Everyone got 2.5 hours except Massimo, who got 3 hours for winning last week's Elimination Challenge. This week, the Elimination winner would also be winning $10,000 because there was no Quickfire.

The Elimination Challenge winner was Shuai with his roasted cabbage with rosehip-glazed pork belly, sour cabbage broth, a poplar and black spruce oil, and a lovage and thatching ant togarashi.
"I was really caught up in all of the different flavors that played so nicely with each other…I found this a really exquisite dish," said Holder about Shuai's dish.
The bottom two were Massimo and Bailey, with the eliminated chef being Massimo in an emotional elimination, not only because he's the last Canadian chef left in the competition, but he's Italian, and he was really excited about getting to go to Italy for the finale. Everyone was crying when he was eliminated.
"Oof, that hurt," said Massimo after he was told to pack his knives and go, to which host Kristen Kish replied, "It hurt for me to say it." Kish was audibly trying not to cry.
During the actual meal, the judges loved his dish. Tom Colicchio said, "I like what Massimo did here because he took one ingredient, mustard, and really focused on that, and I think he did it really well."
But Gail Simmons and some of the other judges thought his bannock was too intensely herbal, floral and bitter, and it "felt disconnected from the trout."
