Top Chef's 13th episode of its 22nd season was titled "Viva Milano!" and it saw the Top Chef: Destination Canada Top 4 head to Milan, Italy, for the last elimination before the final meal. The Quickfire Challenge brought in every chef's worst nightmare for a culinary competition — risotto. And then one chef just missed out on the final cook in the Elimination Challenge.
To help the chefs, the show brought in four athletes who are set to compete for Team USA during the 2026 Winter Games in Milan, Italy — Olympic athletes Elana Meyers Taylor and Red Gerard, and Paralympic athletes Oksana Masters and Declan Farmer.
The guest judges were two-star Michelin chef Andrea Aprea and Top Chef: World All-Stars alum Ali Ghzawi.

What were the challenges on Top Chef season 22, episode 13?
The Quickfire Challenge, which this time was not going to be taken into account when it came time to do the elimination, involved making the dreaded risotto. It did come with a $15,000 prize for the winner, though.
"Not risotto! I thought that I could manifest it out of this competition and completely avoid it," said Tristen.
Weirdly, several of them chose to make a "risotto" without rice, which judge Tom Colicchio really balked at. He pointed out that "risotto" literally means, "from riso," and riso means rice. So even though they were all tasty, it was still really surprising to them that there was no rice in a couple of the dishes.

The winner was Tristen with his West Africa-inspied risotto with heirloom tomatoes and charred buttered greens. He joked afterward, "Look at that! I made Black people risotto and won."
The next challenge was a head-to-head tournament. Round 1 was a polenta challenge and the winner would get a prize from Delta airlines plus an automatic berth into the finale. The second round was a beet dish, and that winner would also advance to the finale.
Round 3 was the final battle for a spot in the finale and it had to highlight gorgonzola cheese. Polenta, beets and gorgonzola are all ingredients that are frequently used in Northern Italian cuisine.
In round 1, the judges panel gave the most votes to Shuai with five, for his five-spice roast duck on creamy polenta. Bailey got two votes, and Cesar and Tristen each got one. Interestingly, the athletes each voted for the chef they were paired with the previous day. If it had been only the guest chefs and regular judges voting, it was four votes for Shuai and one for Bailey; no votes for Cesar or Tristen.

In round 2, Tristen won with six votes for his glazed beets with a smoked beet puree, beet pikliz (a Haitian condiment made with Scotch bonnet peppers, pickled cabbage and carrots) and pork belly. Four of the five actual judges voted for him, plus two of the athletes. Cesar received votes from the remaining judge plus two of the athletes. Bailey received no votes.
In round 3, Cesar made a butternut squash casserole with gorgonzola and a sage pesto, while Bailey made crispy polenta gratinata with a bruleed gorgonzola, looking for redemption on her bruleed bleu cheese that didn't work earlier in the season, which felt like a massive risk. The judges were certainly surprised that she tried a bruleed funky cheese again after it was such a miss the first time.
But this time, her dish worked and ultimately, the five judges (no athletes voted on the final round) sent Bailey to the finale and sent Cesar home.

"I'm just telling myself over and over about how proud I am of me. I got to go to Europe for the first time, I got to see myself grow as a person, grow as a chef," said Cesar as he left.
There were a lot of tears after Cesar left, from the judges and the contestants.
