There are very few desserts that make my kids' eyes light up quite like a soft, warm, homemade cake. They are all about that soft, fluffy texture and the sweet vanilla flavor. But the frosting? That’s where they draw the line. They’ll scrape it off without hesitation, leaving behind little mounds of untouched buttercream while happily devouring the cake beneath. Honestly, they get that from me.
And that’s exactly why these Confetti Ooey Gooey Butter Cake Bars, shared by content creator Luke Brown (@cookinginthemidwest), are going to become a staple in our house. They deliver all the cake goodness we love without a thick layer of frosting getting in the way of the flavor we want.

You can grab the full recipe on Luke's Instagram page, but you will need a box of confetti cake mix, eggs, melted butter, vanilla extract, cream cheese (at room temperature), powdered sugar and rainbow sprinkles (because more sprinkles are always better). Preheat your oven to 350° and prepare a 9-by-13-inch baking dish by spraying it with nonstick spray and lining it with parchment paper. This may seem like a lot, but trust me, the parchment paper makes cleanup so much easier and I'm all about easy.
In a large bowl, mix the cake mix, eggs, vanilla extract and melted butter using a hand mixer or stand mixer. Mix until everything is fully combined. It will be thick, almost like cookie dough.
Press the cake mixture evenly into the prepared baking dish. This is the part where little hands love to help! Something about squishing dough into a pan is oddly satisfying, almost like edible Play-Doh.
In another bowl, mix the powdered sugar and room-temperature cream cheese until smooth. Add more eggs and mix until the filling is smooth.
Pour the cream cheese mixture over the cake batter layer, spreading it evenly to the edges. Then, for the grand finale, scatter a generous handful of sprinkles over the top—because a Funfetti dessert needs all the extra sprinkles!
Bake for 35 minutes or until the top looks golden and set. The center should have a slight jiggle to it, but it shouldn't be runny.
Let the bars cool completely before slicing. This is probably the hardest part because the smell is so tempting, but trust me, patience is key! These are worth the wait!
Once cooled, cut into squares and watch your kids’ faces light up! Store any leftovers in the fridge (if there are any) and enjoy for days!

Why We Love These Gooey Cake Bars
These bars are everything we love about birthday cake, minus the fuss. They have the soft texture of cake, the richness of a gooey butter bar and just the right amount of sweetness without needing a thick layer of frosting. My kids get their cake fix, and I get a dessert that’s easy to throw together with minimal effort. Plus, they’re so good chilled straight from the fridge. If you’re a fellow frosting-scraper (or have little ones who are), this recipe is a total winner!
