SAN DIEGO – A new bayfront eatery where Italian tradition meets refined culinary craft has opened in the Bahia Resort Hotel.
Bianchi Pizza & Pasta is the latest culinary concept by Evans Hotels; it recently opened at 998 W. Mission Bay Dr. in Mission Beach.
Named in homage to the renowned Italian vintage car and bicycle brand, reflecting hotelier Bill Evans’ passion for heritage cars, Bianchi Pizza & Pasta features an authentic Neapolitan-inspired Italian menu created by Palermo, Italy-born and raised chef Ignazio Tagliavia.
Menu highlights include a variety of wood-fired artisanal pizzas (with gluten-free crusts available) coming out of a Marra Forni pizza oven, designed in Italy and made in the U.S., which can heat up to 950 degrees Fahrenheit.

“It was something that was the brainchild of (resort owner) Mr. Evans, drawn from his travels to Italy and Europe,” Peroutka said.
“He wanted to create a truly authentic Italian neighborhood restaurant that has great food with great ingredients, but is approachable, being a restaurant you don’t need to get dressed up for, with a completely recognizable menu that’s not too fancy, so you know what you order.”
Describing what a Neapolitan-inspired Italian menu consists of, Peroutka said: “It’s a style of pizza making using Italian hard wheat flour that has a naturally slow fermentation process. The dough has high hydration, and it cooks at a high temperature in a stone dome oven to create this airy, light pizza. It’s a thin, 14-inch pizza that, once eaten, doesn’t make you feel heavy or full. The ingredients on the pizza are simple and are directly imported from Italy, where they make a great pizza.”
Designed to bring people together, Bianchi Pizza & Pasta features an inviting 45-seat al fresco patio inspired by a traditional Italian piazza, a cozy indoor dining space, private dining options ideal for families and larger groups of up to 20 people, and a lively marble bar. All seating is seamlessly connected to the resort’s unique gathering spaces, including the iconic Airstream and the seal pond.
Peroutka said reservations for Bianchi online are encouraged, especially during peak times and weekends, though walk-ins are accepted. He added that there is also a fine selection of Italian and California wines at the restaurant, as well as a drink menu with Italian-inspired cocktails.
“It’s a nice local dining spot. If you’re driving home from work and you don’t feel like cooking, stop by,” Peroutka said. “You can do a date night here as well. This is a place where, when you walk out, you say, ‘I didn’t spend my entire dining budget on one experience and didn’t need to save up for months to go there.’ We have some good value items.”
