When it comes to summertime dishes, everyone knows that pasta salad reigns supreme—including Drew Barrymore and Valerie Bertinelli!
During a new segment of The Drew Barrymore Show, Barrymore, 50, and Bertinelli, 65, teamed up to make a refreshing side dish perfect for any BBQ.
“Valerie Bertinelli joins Drew Barrymore in the kitchen to whip up her delicious Mediterranean-inspired ratatouille pasta salad using Bertolli Olive Oil and Balsamic Vinaigrette,” the show’s caption read via Instagram on Monday, June 2.

“The Mediterranean diet is an excellent diet—it's more like a lifestyle,” Bertinelli explained. “It’s not restrictive at all. It’s a way to eat healthier using the best ingredients while still enjoying flavor—and guess what … olive oil! That’s one of the key ingredients in a Mediterranean diet.”
“You’re so right. It’s a lifestyle,” Barrymore agreed.
“This recipe is from my newest cookbook, Indulge—ratatouille pasta salad with balsamic vinaigrette,” Bertinelli said. “We’ve got some of my favorite veggies: squash, mushrooms, eggplant … and some shallots.”
“And this Bertolli cooking oil can really take the heat,” she continued. “Spread this all over the veggies, and we’re gonna roast them, because roasting brings out all that flavor. Cook them in the oven at 375°F for about 30 to 40 minutes.”
To complete the dish, boil the pasta with a little Bertolli olive oil added to the water.
For the dressing, combine chopped shallots, mustard, a little honey, balsamic vinaigrette, and a quarter cup of extra virgin olive oil.
Once the pasta has cooled, add the roasted veggies, sliced fresh tomatoes, the dressing, and toss to combine. Top with feta and fresh basil.
