Jiffy cornbread mix has been an American staple since it was introduced in the 1950s because of its affordable price point, consistent quality and the endless ways you can customize the mix. How to Make Blueberry Cornbread Cobbler with Boxed Jiffy Cornbread Mix
There are a few blueberry cornbread cobbler recipes out there, but we've based our how-to on the recipe from the U.S. Highbush Blueberry Council website, a group that knows their fruit.
In a baking dish, add blueberries, apricot preserves or jam and your choice of apple or orange juice. Toss the ingredients to fully combine and spread into an even layer in the pan. Next, prepare a box of Jiffy cornbread mix according to package directions, then pour it evenly over the berries. Bake at 400° until the top of the cornbread is firm but lightly browned and blueberries bubble, about 20 minutes. Serve warm or at room temperature.
