As we approach outdoor concert season, it's a great time to reflect on the amazing shows of summers gone by. One that comes to mind immediately? The English rock band Queen tearing it up at the 1985 Live Aid Concert at Wembley Stadium in London.
If I'm being honest, I wasn't alive when Queen played Live Aid, but the band's music has been playing in my family's house ever since I can remember. From "Bohemian Rhapsody" to "Somebody To Love" to "We Are the Champions," Queen's rock songs are bold, theatrical, vulnerable and innovative—and a lot of that is thanks to frontman Freddie Mercury.
A powerful singer with a stunning four-octave range, Mercury wrote and produced many of Queen’s smash hits.Mercury was known for his passion for all different types of music, of course, but when it came to food, there was one particular dish he considered the ultimate comfort food.

“Some of us live to eat, but Freddie was one of those people who ate to live,” said Peter Freestone, who was Freddie Mercury's personal assistant for more than a decade. But one dish the singer couldn't resist? Chicken dhansak. In a post on his blog, Freestone writes, "When I started working for Freddie back in 1979, Freddie loved spicy foods. Not necessarily chili hot, but food flavoured with many different exotic spices. Exotic then, commonplace now! His favourite curry was a chicken dhansak, a chicken curry made with vegetables and lentils."

While Mercury rarely discussed his Parsi-Indian heritage in interviews, one of the things that he couldn't resist behind the stage was his love for Parsi-Indian cuisine.
If you're a fan of sweet and sour foods, chicken dhansak will hit all the right notes. The Parsi dish is made with chicken or lamb that's simmered in a sweet, tangy, slightly hot lentil sauce. The dish is also often loaded with vegetables, including aubergine (eggplant), potatoes, spinach and onions. It's served over a bed of rice, to make sure you're able to grab every drop of sauce. It's a dish guaranteed to re-energize you after a long day at your desk—or a performance in front of thousands of screaming fans.

There are many versions of chicken dhansak online, but we're basing our instructions off the recipe shared by Far Out Magazine.
To make the dish, soak lentils overnight (this is called for in some recipes and not called for in other recipes), then cook them until tender. Cook chicken until brown, then fry cumin seeds, cardamom, cassia bark (cinnamon stick), mustard seeds, onions, garlic and salt until golden.
Add canned tomatoes, followed by chopped aubergine (eggplant), potatoes, spinach and onions and cook briefly. Stir in the lentils, mash slightly, then return the chicken to the pan along with the spices. Simmer the mixture gently for 40 minutes, add fresh coriander (cilantro) and mint, and cook for another 10 minutes. Serve hot with rice.
