You'll also need sharp cheddar cheese (the sharper, the better) and russet potatoes to soak up all that creamy goodness and to make sure the texture is just right—not too mushy, not too firm.

How to Make Mississippi Mud Potatoes
The steps are super straightforward, which is another reason I’m eager to try this out. First, bake the bacon until crispy (this is key—it needs that crunch to stand out in the mix). Then, whisk together the mayo, sour cream, seasonings and scallions.
Add cheese and chopped potatoes the the mixture, then gently fold in the crumbled bacon. Spoon it into a baking dish and bake until the potatoes are tender and the top is golden and bubbly.
If you want, you can add some sour cream to the top once they are done or some fried onions for extra crunch and flavor.
I’m already dreaming about serving this with roasted chicken, grilled steak or even just on its own with a green salad. And the leftovers make an amazing breakfast hash! You just toss them in a skillet and let the cheese get golden and crispy again. That might be reason enough to double the batch.
Mississippi Mud Potatoes may have an odd name, but I can already tell they are going to be anything but weird. Whether it’s for a family dinner, a potluck or just because I’m craving something cozy, this dish feels like it’s about to earn a permanent spot in my meal rotation.
