How to Make Traditional Shopska Salad
You don’t need fancy tools or hours in the kitchen to make this; just some fresh ingredients and a sharp knife!
You can get Logan's recipe on his page, but for a traditional Shopska salad, you'll need chopped tomatoes, peeled and chopped cucumber, chopped roasted red peppers (jarred is fine), finely sliced or diced red onion, extra virgin olive oil, red wine vinegar (optional), salt and pepper and grated sirene cheese or good-quality feta. (Look for a block of feta vs. crumbled feta.) You can also add fresh parsley for garnish.
In a large bowl, combine chopped tomatoes, cucumbers, peppers and onion. Drizzle with oil and vinegar, season with salt and pepper and toss gently. Top with a generous amount of grated cheese—don’t be shy, it’s the best part! Sprinkle with parsley if you like, and serve cold or at room temperature.
That’s it! It’s easy, quick, and perfect as a side dish, light lunch or even a party salad. And you’ll want to make extra because it only gets better as it sits.
