Green beans are one of those rare veggies that everyone in my house actually agrees on. I love them. My kids love them. So naturally, they’re a regular side dish on our dinner table. But as much as I adore green beans, I’m always looking for new ways to keep them interesting because there’s only so many times you can steam, sauté or roast them before things start to feel a little meh.
Diane Morrisey, NYT best-selling cookbook author and the queen of delicious-but-doable food, shared a great green bean recipe on her Instagram (@dianemorrisey) that instantly made me say, “Okay, that’s it. We’re making this.” It’s a fresh take that levels up green beans with just a few ingredients, and it’s the kind of dish that’s fancy enough for a dinner party (or Easter dinner) but also easy enough for a weeknight.

Like me, Diane said she turns to green beans anytime she's making food for a crowd because they’re easy, delicious and nearly impossible to mess up. Plus, they can be prepped the day before, they don’t need to be piping hot to taste good and they look beautiful in a big bowl or platter.
This Steamed Haricots Verts in a Lemon Thyme Vinaigrette recipe might sound a little too fancy for a Tuesday night, but I promise it’s super simple. The key is using haricots verts (those elegant, thin French green beans), which cook quickly and have a lovely snap to them. Once they’re blanched, they get tossed in a bright, lemony vinaigrette that’s fresh and flavorful.
To make this, you bring a big pot of salted water to a boil. Add your beans and boil for just three minutes—no more! You want them crisp-tender, not mushy. Then drain and plunge them into an ice bath (or just run them under cold water) to stop the cooking.
Next, mix equal parts fresh lemon juice and extra virgin olive oil. Add a pinch of salt, some cracked pepper and fresh thyme leaves. Shake it all up in a Mason jar (or whisk it in a bowl), and pour as much as you want over your cooled beans. Give it a toss, check your seasoning to make sure it's where you want it to be and finish it off with some lemon zest and a few thin lemon slices. Voilà! that's all it takes!
As often happens when Morrisey posts a recipe, the fans instantly popped into the comments. "Perfect addition to any Easter spread," said one person. "Looks gorgeous!" added another.
