The genius of fried eggs lies in the contrast between crispy whites and runny yolks, but what if you could add one thing to make this breakfast classic even better?
In my recent social media travels, I ran across Christopher Kimball over at Milk Street frying eggs in a skillet with crunchy breadcrumbs—and I immediately took notice. It looked like the perfect way to upgrade fried eggs, especially for a weekend brunch or a quick and easy dinner.
I love how this technique adds extra texture and flavor to the eggs, plus it looks cool too. It’s spring and this fried egg recipe is perfect to combine with all the tiny thyme leaves and sprigs of chives starting to burst forth in my garden. Here's what you need to know to make breadcrumb-fried eggs at home.

As Kimball explains in the video, this cool method was inspired by Judy Rodgers, the late, legendary San Francisco chef who was a pioneer of simple California cooking.
To make the dish, you start by tossing an equal amount of panko breadcrumbs and grated Parmesan cheese with some are Aleppo pepper, which is milder than red pepper flakes. A splash of vinegar is added for acidity along with fresh thyme leaves and sesame seeds.
Next, add the mixture to a nonstick skillet and toast it in a little butter until the breadcrumbs are crispy and golden. Make four wells in the breadcrumbs, add some butter to each well, then carefully pour in an egg. (Commenters had a lot to say about the amount of butter used for melting under each egg, but use the amount of butter that works for you.)
Once the eggs go in, cover the pan with a lid and let the eggs cook. Covering the pan will help keep the heat in so the steam can gently cook the eggs. Kimball cooks the eggs for 5 minutes, which will give you firm whites and runny yolks. Want a firmer yolk? Cook the eggs for another minute or two.

How to Serve Breadcrumb Fried Eggs
Try these fried eggs with breakfast staples, like bacon, corned beef hash or even a simple slice of toast. They'd also be a fun addition to a BLT or a burger. For brunch, swap out the typical poached egg on eggs Benedict for a breadcrumb-fried egg. We'd also like to try the eggs on a green salad and they'd also be right at home on top of a bowl of pasta or rice. The seasoned breadcrumbs mean the eggs are flavorful as-is, but you could also top them with pesto, hot sauce or chili crisp for a little more pizzaz.
