This is a genius spin on the classic salad that’s equal parts crunchy, savory and satisfying.
The combination of hearty cabbage, shredded chicken and a tangy sesame dressing makes this dish both comforting and refreshing and the fact that it can be ready in just 30 minutes makes it even better! I’ll be honest—I love a good food mashup, and this recipe delivers! Classic Chinese chicken salad is already a favorite, but adding crispy rice instead of croutons or wonton strips? Absolute genius. It brings a warm, nutty crunch that pairs beautifully with the fresh veggies and tangy dressing.
You can get the full recipe on Sharf's Instagram page (@maxiskitchen), but to make this you simply melt butter in a skillet, add cooked jasmine rice (this is a great way to use those leftovers) and toast it until golden brown and crispy. Stir often, so the rice doesn’t burn, but let it sit undisturbed in between stirs to create those golden, crispy bits.
After about five minutes, transfer the crispy rice to a paper towel-lined plate and set it aside while you prep the salad.
For the salad, you need Napa cabbage, red cabbage, carrots, scallions, chicken breasts and sesame seeds.

A Tangy, Savory Dressing That Ties It All Together
You can buy pre-made dressing for this salad, but Sharf's homemade version looks so good (and easy!) I might make a double batch. To make it, you need soy sauce, sesame oil, rice vinegar, sugar, fresh minced garlic and black pepper.
If you eat gluten-free, like me, just swap the soy sauce for tamari. I'm doubling the dressing so I can have some on hand for quick weekday salads or as a marinade for chicken or tofu.

Great Ways to Customize This Salad
This salad is already fantastic, but I love recipes that allow for customization. You could swap the chicken for avocado or pan-seared tofu. For a heartier dinner, add some sliced almonds and extra sesame seeds for more crunch and serve it alongside some fresh fruit.
If you want to use this recipe for meal prep, make extra crispy rice, salad mix and dressing and store everything separately. With all of those components ready to go, you can throw a fresh salad together in minutes.
