The Secret Ingredient That Will Make Your Pork Chops 10x Better

Pork chops are a fantastic option for a quick and satisfying weeknight dinner. They cook in just a matter of minutes, making them a lifesaver for busy families juggling packed schedules. Versatile and budget-friendly, pork chops pair well with many types of side dishes—roasted vegetables, mashed potatoes or a generous scoop of apple sauce—making it easy to create a complete, delicious and nutritious meal without a ton of effort.

That said, pork chops can sometimes fall short in the flavor and texture department, often ending up a bit bland even when you season them well and cooking up dry if you're not keeping a close eye on them.

To elevate baked pork chops, we like to marinate them for a few hours before cooking them, or add a flavorful crust, like Parmesan cheese, to create a crispy exterior. You can also season them liberally with a spice rub or some Italian seasoning.

When you're short on time, though, you can't always spend hours marinating and seasoning pork chops to perfection. Luckily, cookbook author and content creator Matthew Bounds (@yourbarefootneighbor) is here to help His pork chop recipe uses a simple, common ingredient that will get you the juiciest, most flavorful pork chops in no time and we can't wait to give this a try!

Matthew uses mayo (yes, mayo!) on his pork chops to make them tender, juicy and full of flavor. You can snag the full recipe on his TikTok page, but it's really simple and perfect for a fast weeknight meal. You'll need mayo, parmesan cheese, a Ranch dressing packet, boneless pork chops and Stove Top Cornbread Stuffing Mix.

Line a baking sheet with foil and spray that with cooking spray. Place the pork chops on the sheet and season them with salt and pepper. Mix all of the other ingredients in a bowl, minus the boxed stuffing mix. Place a spoonful of the mayo mixture on top of each pork chop and then top that with some of the stuffing mix, straight from the box. Spray the tops of the stuffing mix with more cooking spray so that it will brown.

Use the remaining mayo mixture to coat some brussels sprouts, and stir in some of the cornbread mix to add some crunch. Matthew says you can also use green beans or any other veggie you like. Place the veggies on the baking sheet and cook everything at 400° for 20-25 minutes.

While this recipe looks great, you can also use the mayo trick with just salt and pepper (or your favorite seasoning blend) if you're short on time and want a quick pork chop upgrade.

Why Mayonnaise Helps Make Meat Tender

You may think that using mayo on pork chops (or any meat) sounds a little odd, but if you think about it, it does make sense.

Mayo's high fat content locks in moisture, keeping the meat juicy during cooking. The oil in mayo creates a protective barrier that prevents moisture loss, while the egg proteins help tenderize the meat. When exposed to heat, mayonnaise enhances browning and adds a crisp, golden crust with a rich, savory flavor. Additionally, mayo is a great way to help you keep seasonings in place so they adhere evenly to the meat, ensuring every bite is both juicy and perfectly seasoned.

Try the mayo trick on chicken, steak, lamb and even your Thanksgiving turkey. We also love to make grilled cheese with mayonnaise instead of butter for perfect browning with no burning.
