At the heart of every great food hack is a simple idea that just makes sense, and this one is no different. Tortillas, the versatile heroes of quick meals, make the perfect blank canvas for all your pizza cravings. Unlike traditional frozen pizza rolls that can be a bit skimpy on the fillings and hit-or-miss on flavor, tortillas can be rolled or folded into large pockets that let you pack in as much gooey cheese, spicy pepperoni and rich marinara sauce as your heart desires. Plus, they’re air fryer-friendly, meaning you can get that perfect crispy exterior without having to deal with a vat of hot oil. This is a recipe that checks all the boxes because it's quick, delicious and endlessly customizable.Related: The Genius Tortilla Trick We Wish We’d Known About Sooner

How to Make the Ultimate Pizza Pockets Using a Flour Tortilla

For these pizza pockets, you'll need tortillas, shredded mozzarella (or your favorite pizza cheese blend), pepperoni, spicy salami (or any pizza toppings you love), and pizza or marinara sauce. You can also add garlic powder, Italian seasoning and/or red pepper flakes to spice things up a bit.

Start by laying your tortilla flat on a cutting board and cutting it in half. Next, fold one tortilla half into thirds, creating a cone shape. Holding the tortilla cone in your hand, add the fillings. Place the cone on a cutting board and seal the edges using a fork. (This is the kind of thing that's easier to show rather than tell. To see this process in action, check out @thechefoutwest's video above.)

For extra crispiness, give the outside a light spray of cooking oil or brush it with a bit of melted butter, then sprinkle with Italian seasoning. Air fry at 400° for 10 minutes or bake in a preheated oven at 400° for 12 minutes, flipping halfway through if needed, until golden and crispy.

Let them cool for a minute (no one likes a burnt tongue from hot pizza rolls), then dig in. You’ll get that satisfying cheese pull and a crunchy bite, just like your favorite pizza joint, minus the delivery fee.

Once you’ve nailed the basics, feel free to get creative. Swap the salami for crumbled sausage, add fresh basil, or even stuff them with spinach and ricotta for a more elevated take. The possibilities are endless, and that’s what makes this hack so genius.

So, if you’ve been living off of frozen pizza rolls, consider this your sign to level up. These tortilla pizza pockets are everything you love about pizza, conveniently wrapped up in a perfectly crispy, golden-brown shell. You’ll wonder why you didn’t try this sooner!
