@emilyscooking_SMASHED JACKET POTATO PIZZA ?? If you love pizza and jacket potatoes then why not have them both ? Smashed jacket potatoes brushed with garlic butter, tomato and herb sauce, parmesan, cheddar, pepperoni and some more herbs and spices, it's a game changer! ? • Cook the jacket potatoes as you normally would whether that's boiled or baked. I had two jacket potatoes left from the day before! • Line a tray with baking paper. Brush on some garlic butter, parmesan and cheddar. Season with salt, pepper and anything you like. • Add the potato on top and smash it! Use something flat and big, I used the bottom of a pan. Slowly side the pan off. • Brush on some more garlic butter and cook in the oven at 180-200°C for about 20-30 minutes, you want to bake them so they are just slightly crispy. If you'd rather it be soft then skip to the next step. It's up to you how you want it ? • Remove the tray and add your tomato and herb sauce, cheese and pepperoni. • Place back it back the oven for another 15-20 minutes or more, basically until the cheese is melted and pepperoni is cooked to your liking. Sometimes the pepperoni releases a lot of oil so check while it's cooking and carefully use a kitchen towel to remove this. • Carefully remove with a spatula and serve with a dip of our choice! YUMMMM! ? #simplerecipes #pizza #pizzanight #easyrecipeideas #smashedpotatoes #foodhacks #fyp #jacketpotato
♬ A Message to You Rudy - The Specials"If you love pizza and jacket potatoes then why not have them both," Emily wrote in the caption of her TikTok video. (Jacket potatoes are what baked potatoes are called in some parts of the UK.)
In the video, Emily smashes baked potatoes until they're the thickness of a pizza crust, baked them again until they're a bit crispy, then adds pizza toppings—tomato sauce, cheese and pepperoni, in this case, but you could use your favorite pizza toppings. That all goes back into the oven until the cheese melts. Potatoes plus pizza in one dish? Sign us up!

How to Make Smashed Jacket Potato Pizza
To make this meal, you line a baking dish with parchment paper and brush on some garlic butter. Sprinkle some piles of parmesan and cheddar and season those with salt, pepper and any other seasonings you like.
Add a cooked baked potato on top of the cheese and smash it with something flat and big, like the bottom of a pan. Brush on some more garlic butter and cook in the oven at 350° for 20-30 minutes, until the potatoes are slightly crispy.
Take the potatoes out of the oven and add tomato sauce, cheese and pepperoni (or your preferred pizza toppings). Place them back in the oven for another 15-20 minutes, until the cheese is melted and the pepperoni is cooked.
You can serve these with Ranch dressing, marinara or any other dip you like.

Other Great Ways to Make Smashed Jacket Potato Pizzas
Many people commented on the post that it looks absolutely delicious and we can see this becoming a fan-favorite recipe at our house. It's also very easy to customize.
We could see this being made with BBQ sauce and pulled pork, or cheddar cheese and broccoli for a vegetarian meal. You could also keep things simple and top the potatoes with a blend of cheeses and serve them as a side dish with chicken, pork or steak as a fun alternative to baked potatoes.
Switching up the potatoes would also be a fun way to customize this dish. Sweet potatoes would make a good base, as would buttery Yukon golds. You could also use small potatoes and top them with an array of different toppings for a fun party snack. The bags that have a mix of white, red and blue potatoes would be especially festive. No matter how you make them, we think these will be a smashing success at your house.
