The Genius Costco Dip Hack We Wish We’d Known About Sooner

I have a love-hate relationship with appetizers. On one hand, I love how they're a socially acceptable way to eat a bunch of snacks right before a celebratory meal. On the other hand, I'm not a fan of how, even though it's meant to be a quick bite, a lot of effort often goes into making appetizers. While I love to make sure my guests are taken care of as I make finishing touches to the main meal, my boundaries are non-porous and I intend to keep them that way. 

If I see an appetizer touted as "easy" that involves wrapping a bunch of little sausages in puff pastry and baking them or God forbid, chopping a ton of vegetables, that's a no for me. My appetizers have to be truly as quick and easy as dumping a bunch of things together. 

    So when I came across a three-ingredient dip recipe going viral on TikTok, I felt so seen and I knew it would become my secret weapon for holiday entertaining. In the video, TikTok creator @summermpeters makes a Boursin fig dip right before our eyes. It's "such a crowd-pleaser" she promises. The best part? You can get all of the ingredients—Boursin spread, Dalmatia brand fig spread and Kirkland shelled pistachios—from Costco.

    The dip is just Boursin cheese spread, fig spread and chopped pistachios layered in a baking dish. It's rich, herby, sweet and salty with a beautiful melange of textures and flavors. According to Summer, the dip is great with pretty much any dipping vessel: "I've used club crackers, pita crackers & raisin crisps (I think that's what they're called) from Trader Joe's. Honestly any cracker/baguette/crostini. Apples would def be good too!" she said.

    We would pair it with a buttery Ritz or a holiday cookie if we're feeling chaotic (it's the holidays, go off you filthy animal!). Honestly, we bet this dip could make a piece of cardboard taste good. 

    If you're not a Costco member, fret not. The dip is easily achievable using ingredients from your go-to grocery store, like Aldi or Trader Joe's.

    How to Make the Costco Dip 

    In a shallow serving dish, use a spoon to evenly spread a thick layer of Boursin cheese. Pro tip: this is easiest to do when your Boursin is at room temperature and slightly softened. Any type of Boursin will work in this recipe. Summer uses the dairy-free version for her party of lactose-sensitive girls, but it's also great made with classic garlic and fine herbs flavor Boursin or any other flavor in the brand's lineup. 

    Next, spread on the fig spread (about half the jar). Chop up the pistachios and sprinkle them on top. If you want to go all out, you can add two more ingredients: a drizzle of regular or hot honey and some freshly cracked black pepper.  

    TikTok food fanatics love this dip for how it gives off "Oh what this? I just threw this together" energy. "Made this for a party last night, it was gone so fast and had multiple people asking me for the recipe." exclaimed one user.

    Another user bravely admitted, "Yesterday I slaved over making homemade meatballs and sauce for subs for a party. Threw this together in five minutes. This was by far the biggest hit and people are still talking about it today!"

    "When I say I'm going to need a tube of this...", commented the Instacart TikTok account. (We assume they mean tub.) Can you imagine getting a tub of this triple-layer spread premade at your local Costco? Cue Mariah Carey's "All I Want for Christmas."
