To make this sandwich, you'll need a large, firm tomato (beefsteak or heirloom work great), salt and pepper, egg, milk, flour (seasoned with garlic powder, paprika, salt, pepper, breadcrumbs (panko or regular, also seasoned), oil for frying and your favorite sandwich fillings (cheese, lettuce, bacon, deli meat, avocado, etc.).Start by slicing your tomato into thick rounds. You want them sturdy enough to act as the “bread.”
Next, set up a breading station. In one bowl, beat an egg with a splash of milk, seasoned with salt and pepper. In a second bowl, mix flour, garlic powder, paprika, salt and pepper. In a third bowl, add seasoned breadcrumbs (you can add Italian seasoning, chili flakes, or even Parmesan).Dredge each tomato slice first in flour, then in egg, then in breadcrumbs. Press gently to help the coating stick.
Fry in a skillet over medium heat with enough oil to coat the bottom. Fry each slice for two to three minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate.
