For the past two decades, we've seen Gordon Ramsay run a high-stakes restaurant with an iron fist in Hell's Kitchen, host culinary competitions like MasterChef and Next Level Chef, and help struggling restaurants out in the world in Kitchen Nightmares. But the chef and restaurateur's newest show, Gordon Ramsay's Secret Service, has him becoming something he has never been in his illustrious career: A spy.

A press release for the new series reads, "In a Gordon Ramsay series first, Chef Ramsay will venture into struggling restaurants under the cover of night. With the help of a secret source on the inside, he’ll gather raw, unfiltered evidence and get a 360-degree view of the major issues facing each restaurant. This insider will not only remain a secret to the staff, but will also help Ramsay infiltrate the restaurant after-hours for a dramatic nighttime black light kitchen investigation that reveals more filth and grossness than ever before.
"By the time Ramsay reveals his identity, it will be too late for staff to cover up their culinary crimes. Gordon Ramsay’s Secret Servicewill be his toughest assignment yet as he takes drastic measures to transform not only the restaurant but also the staff, because Gordon knows he can upgrade the menu and renovate the restaurant, but the most important change has to come from the people. Are the restaurant and staff willing to accept Gordon’s mission, or are they too far gone to be saved?"

In the exclusive sneak peek of the May 21 premiere below, you can see Ramsay in action as he stakes out the D.C. restaurant "Parthenon." A beloved family-run Greek institute, it seems to be as well-kept as the Greek ruin that shares its name. As he outlines in the clip, there are unsanitary conditions promoting bacteria growth and rats running amok behind the scenes. As Ramsay puts it, "[The owner] may be running this restaurant for nearly four decades. But this place is a mess."
Gordon Ramsay's Secret Service premieres Wednesday, May 21 at 9:00 p.m. ET/PT on FOX.
