The Genius Way to Make a Fluffernutter Sandwich 10x Better

My son is a full-on fluffernutter fan, and it’s no mystery why. When I was pregnant with him, I ate one every single day. I craved that combo of creamy peanut butter and sticky-sweet marshmallow fluff like it was a vital nutrient. Now, years later, it’s his go-to comfort food, but even classics can get a glow-up, and recently I came across a tricked-out version of the fluffernutter, shared by content creator Ian Brown Hill (@ian.brownhill), that’s not only extra-decadent, but also toasted golden and buttery like a grilled cheese. In other words, it's basically a snack-time masterpiece.

    For the uninitiated, a fluffernutter is a simple sandwich made of peanut butter and marshmallow fluff, traditionally served on white bread. I always grilled mine like a grilled cheese, because that crispy outside was perfection with the gooey fluff, but even without grilling it’s a classic childhood treat in many households.

    But this upgraded version takes this delicious sandwich from an “afternoon snack” to “dessert you dream about.”

    Start with three slices of bread. Soft white works perfectly, but more on variations in a bit. Take the crust off one of those slices. This will be your gooey middle layer.

    On the bottom slice (with crust), spread marshmallow fluff. On one side of the crustless slice, spread peanut butter, and press it onto the fluff-covered slice.

    Then on the other side of the crustless slice, spread more fluff. Top it off with the final slice (crust on) that’s been slathered with more peanut butter.

    Now you’ve got a triple-layer sandwich: fluff, PB, fluff, PB.

    From here, butter the outsides like you would a grilled cheese (or just warm some butter in a hot skillet) and grill it in a skillet until golden and toasty on both sides. The heat makes the fluff gooey and the peanut butter a little melty, which I love. The crust gets that buttery, crisp texture that contrasts beautifully with the sweet center.

    Fun Variations to Try

    Someone in the comments suggested using banana bread instead of regular sandwich bread and honestly that's absolutely genius. The banana flavor brings out the richness of the peanut butter, and when you grill it, you get those crispy, caramelized edges that make this version almost like a bread pudding-meets-s’mores combo. Bonus points if your banana bread has chocolate chips.

    Swap out one of the layers of peanut butter for Nutella. Now you’ve got fluff, peanut butter and chocolate hazelnut spread all doing their thing in one sandwich. It’s like a sandwich you’d get at a dessert bar.

    For some texture and a salty-sweet punch, sprinkle crushed pretzels in between the fluff and peanut butter layers before grilling. You’ll get that fun little crunch that breaks up all the soft and gooey elements, and the saltiness from the pretzels really brings out the sweetness of the marshmallow and richness of the peanut butter.

    This grilled fluffernutter upgrade is the kind of thing you make when you want to feel like a kid again but also want a little flair. It’s comfort food wrapped in nostalgia, kissed by butter and toasted to perfection. Whether you keep it classic or shake things up, it’s impossible to go wrong with warm, gooey fluff and peanut butter hugged between slices of golden, buttery bread.
