When cooked well, there's a lot to love about tofu. The key is knowing how to work with it and how to properly marinate it. This clever tip from a Cook's Illustrated reader (@cooksillustrated) may just change how you season tofu and that can be a flavor game-changer for people who want to give this super-food a try.

    So… What Is Tofu, Really?

    Tofu is made by curdling fresh soy milk, pressing it into a solid block and then cooling it. It’s kind of like how cheese is made from dairy milk. You’ll find different varieties and each has its place. For example, silken tofu is great for smoothies and sauces; firm and extra firm tofu are best for stir-fries or grilling. Because it’s made from soy, tofu is naturally packed with plant-based protein.

    You can find it in the refrigerated dairy section of the supermarket. When you buy tofu, be sure to check the package to make sure you're getting the firmness you're looking for.

    Why You Need to Marinate Tofu

    Tofu on its own is mild, but that’s exactly why it’s perfect for soaking up flavor. Marinating tofu infuses it with whatever flavors you're craving. Whether you want it to taste like smoky barbecue, spicy Korean gochujang, or herby garlic and lemon, tofu can take on those flavors.

    So how do you marinate it?

    According to one Cook's Illustrated reader, you should reuse the tofu container for marinating. It's the perfect size to hold the tofu snugly, meaning your marinade doesn’t have to stretch to cover a large bowl. The tight space means the tofu sits in the marinade, not just with it. Every surface gets covered with the flavorful mixture.

    Just remove the tofu, press it to remove excess water and pat it dry with a paper towel. Then, pour the marinade in the tofu container, place the dried tofu back in and add more marinade on top. Cover the container and let it sit for at least 30 minutes.

    Once it's done marinating, remove the tofu, prep it however you'd like and cook it up. The plastic container can be rinsed out and go in the recycling, which also means fewer dishes for you. Winner winner, easy and mess-free plant-based dinner. (That's what they say, right?)
