As someone who has to eat gluten-free, I’m always hunting for ways to enjoy sandwiches without sacrificing flavor or ending up with dry, crumbly bread that feels like cardboard. Add in the fact that I love pickles, and this "bread" recipe, shared by content creator and best-selling cookbook author Arash Hashemi (@shredhappens), is basically made for me. It’s crunchy, cheesy, low-carb, gluten-free and shockingly easy to put together.Instead of using traditional bread and putting cheese inside the sandwich, the cheese becomes the “bread,” and the pickles go right in the middle.     This isn't your average sandwich, and that’s what makes it so good.You start with thinly sliced pickles (go for sandwich slices because they’re evenly cut and easy to layer), then pat them dry with a paper towel. Don't skip this step! It's key so they don’t steam and make everything soggy.

    Next, line a baking tray with parchment paper and sprinkle on a thin rectangle of shredded cheddar cheese. This forms the base of your “bread.” Arrange your pickle slices close together to form a rectangle on top of the cheese. Add a little seasoning if you want, then sprinkle just a bit more cheese on top.Repeat the process to make a second “slice” of "pickle bread," so you have a top and a bottom for your sandwich. Bake your "bread" at 400° for about 20 minutes, which is about how long it should take for the cheese to get golden brown and crispy. Let it cool just enough to handle, then gently peel the cheesy flatbreads off the parchment.

    Now you can assemble your sandwich however you like! I love mine with mustard, some lettuce, red onion, tomato and grilled chicken, but you can use turkey, ham or even a plant-based protein.     Switch It Up With Zucchini

    If you’re in the mood for something slightly different, try using zucchini instead. It’s still low-carb, gluten-free and totally delicious!The process is the same as above, but you'll need to use a large zucchini and slice it thinly using a mandoline or vegetable peeler. From there, repeat the same steps as the pickle version.

    Pickles are packed with flavor, but raw zucchini isn't, so be sure to season the veggie planks with some garlic powder and/or smoked paprika. You will only bake these for 15 minutes, until the cheese edges are golden and crisp.Once it's done, make your sandwich!
