As a mom of six, I’ve made my fair share of grilled cheese sandwiches. They’re quick, easy and always a hit with my kids. But by the time I’ve finished cooking them all, the first ones are already getting cold. And everyone knows that grilled cheese is at its best when it’s fresh and melty!
So, when cookbook author Matthew Bounds (@yourbarefootneighbor) shared a new way to make grilled cheese, I knew I had to try it. His grilled cheese casserole looks like the ultimate solution to my problem, and it sounds absolutely delicious. Plus, it's super easy!

Place two slices of Kraft Singles (or whatever cheese you love) on a piece of frozen Texas toast. Then, top it with another slice of Texas toast to create a sandwich.
Pop them into a toaster oven and let them cook until golden brown and crispy. This step ensures you get that perfect crunch once the casserole is put together.
In a bowl, combine softened cream cheese, tomato soup and Parmesan cheese. Stir well until everything is smooth and creamy. This mixture is going to soak into the sandwiches and create a rich, velvety texture.
Once your sandwiches have cooled slightly, cut each one into six bite-sized pieces. Pour a small amount of the soup mixture into the bottom of a baking dish, then arrange the sandwich pieces on top.
Pour the remaining soup mixture over the sandwiches, making sure everything is evenly coated. Bake uncovered at 400° for 20 minutes.
Matthew describes this casserole as “a grilled cheese bread pudding,” and honestly, that sounds like my kind of comfort food. But, because I can never leave a recipe alone, I already have a couple of ideas to make it even better.

How to Make Grilled Cheese Casserole Your Own
I have three words for you: more cheese, please! Before baking, I plan to sprinkle extra shredded cheese on top. I’m thinking a mix of mozzarella and sharp cheddar for that gooey, melty finish.
Grilled cheese and tomato soup already have a classic, nostalgic flavor, but adding a little Italian seasoning to the soup mixture would take it up a notch. Some garlic powder, oregano and basil would complement the tomato and cheese beautifully.
This recipe is a game-changer, for sure! Instead of standing over the stove flipping sandwiches one by one, I can prep everything in just a few steps and let the oven do the work. The entire dish bakes together, so every bite is warm, cheesy and delicious.
This is truly the grilled cheese and tomato soup combo we all love but in casserole form, making it perfect for chilly nights or when I need an easy meal that satisfies the whole crew.
I can already imagine my kids loving this, and I’m just as excited to dig into it myself. This casserole is going on my must-make list ASAP!
