If there’s one thing you should know about me, it’s that I LOVE coffee. Not in a casual “Oh, I have a cup in the morning” kind of way—I mean, I drink a ridiculous amount of it every day. A pot? That’s just getting started. I have my Nespresso, my coffee brewer, my pour-over and my French press because different moods call for different methods. And while I’ll never say no to a plain black coffee, I also love mixing things up.
That’s where this toasted marshmallow syrup recipe (shared by content creator Ashley Breann) comes in, and when I say it’s dangerously good, I mean it. I could drink it straight! It’s like the gooey, golden-brown goodness of a campfire marshmallow, but in liquid form, and it's ready to take your coffee (or hot chocolate or bourbon cocktail) to the next level.

To make this, you'll need mini marshmallows, sugar, water and vanilla extract.
Start by spreading the marshmallows out on a baking sheet. Pop them under the broiler and keep a close eye on them. (Seriously, don't walk away unless you want a kitchen full of smoke.) It only takes a couple of minutes for them to get that perfect golden brown.
While your kitchen smells like heaven, grab a saucepan and heat up some sugar and water over medium heat. Stir until the sugar dissolves completely.
Add the toasted marshmallows to the sugar mixture and stir. Watch as they melt down into a thick, sweet, caramelized dream. It’s like the essence of a s’more without the chocolate.
Once the marshmallows are dissolved, remove the syrup from the heat and strain out any remaining bits. Then, stir in your vanilla extract for that extra touch of cozy sweetness.
Let the syrup cool completely before transferring it to an airtight container. It’ll keep in the fridge for about two weeks—if you can make it last that long!

Ways to Toasted Marshmallow Syrup
You can use this in your coffee, obviously. Just drizzle it into your morning cup for a fancy, coffee-shop-worthy experience without leaving the house. It’s especially good in an iced latte or cold brew. If you have larger marshmallows hanging around, you can add some on top of your coffee after mixing in this syrup for a fun garnish.
You can also use this syrup as a hot chocolate upgrade (as if hot chocolate wasn’t already amazing enough). Just a splash of this syrup takes it to a whole new level!
Ready for a sweet adult beverage? A little toasted marshmallow syrup in an espresso martini sounds amazing and we think it would also be a good pairing for bourbon, whiskey or rum.
You can also skip straight to dessert and pour it over vanilla or chocolate ice cream—or try adding it to an affogato. You can also use it in a milkshake, and it works great as a topping for pancakes, waffles or French toast.
