This Midwestern classic has been a staple in St. Louis for decades and once you try it, you’ll understand why. It’s not a traditional cake—it’s more like a chewy, custardy, buttery slice of heaven. If you love desserts that are crispy, chewy, and gooey, this one is calling your name.

    Gooey butter cake (aka ooey gooey butter cake aka butter cake)  is a two-layer dessert that’s all about texture. The base of the cake is a dense, chewy, cake that kind of has some blondie vibes. The topping is a buttery, custard-like filling that turns into a gooey layer as it bakes.

    As the story goes, the dessert was accidentally invented in the 1930s when a baker in St. Louis messed up a cake recipe and ended up with something much richer and gooier than expected. Instead of tossing it, they sold it. It became an instant hit and, as they say, the rest is history!

    Today, there are many variations of this recipe with some cooks making everything from scratch and others starting with a cake mix. I don't have time for the from-scratch version, so that's why this recipe shared by Food52 is so great. I can get an gooey butter cake in less than an hour with minimal effort.

    How to Make Gooey Butter Cake Using a Boxed Cake Mix

    You can grab the full recipe on Food52's page, but to make it, you'll need a box of yellow cake mix, vanilla extract, eggs and melted butter for the base. 

    For the topping, you need softened cream cheese, eggs and powdered sugar. 

    Mix the cake mix, egg, vanilla extract and melted butter, then press it into a greased baking dish. This forms the chewy bottom layer.

    Beat together the cream cheese, eggs and powdered sugar until smooth and creamy. Pour this over the crust for the gooey topping.

    Bake at 350° for about 35–40 minutes. The edges should be set, but the center should still have a little jiggle—that’s the gooey magic that makes this cake so much fun! 

    This cake firms up as it cools, so resist the urge to dive in right away (even though that will be hard to do). Sprinkle with extra powdered sugar for the final touch.

    What makes gooey butter cake so good is its contrast of textures. It's chewy on the bottom and melt-in-your-mouth gooey on top. It’s perfect for parties, holidays or just because you’re craving something ridiculously good.
