Pretty-in-Pink Heart Cookies Are the Sweet Gift Everyone Can Enjoy This Valentines Day

These lovely Pretty in Pink Valentine's Day Cookies are fun to make with the kids for any occasion. We bake these gems every Valentine’s Day for my hubby and he really appreciates that we all take a part in the baking and making Valentine’s Day special. My daughter and I love to decorate the kitchen and then I always make a special dinner that the kids will enjoy.

    Even though my daughter Tori does not live at home anymore, she still tries to get home on or around Valentine’s Day so we can all celebrate together. When she was younger, she loved giving these cookies out to her teachers as a gift for V-Day. We would buy clear goodie bags from the craft store with pretty ribbons and put a few in each bag. The teachers loved these cookies and it shows how much they are appreciated.

    With all that said, these cookies can be made year-round with any shape cookie cutter. They're great for Christmas and Easter as well; just change the color of the icing. Did I mention that the recipe is made with basic ingredients and is easy to follow? Have fun making these! They are so delicious, on top of being so pretty.

    Pretty in Pink Valentine's Day Cookies

    Ingredients

    3 cups all purpose flour, sifted1 Tbsp baking powder½ tsp fine sea or kosher salt1 cup unsalted butter, softened1 cup granulated sugar1¼ tsp vanilla extract1 large or extra large egg, room temperature if possiblePreheat oven to 350 degrees. Have a couple of rimmed cookie sheets lined with parchment paper ready to go. Set aside for now.In a medium to a large mixing bowl, using a wire whisk, mix the butter until fluffy. Switch to a rubber spatula and mix in the sugar, egg, and, vanilla. Mix until combined. In a separate mixing bowl, combine the dry ingredients with a wire whisk. Add the flour mixture slowly to the wet ingredients. Mix well. Dig down to combine all the dry ingredients with the wet ones. The dough will be stiff. (Do not put in fridge) Grab the dough and form it into a round ball. Place on a nonstick surface or use parchment paper and roll out. The dough should be on the thicker side. Maybe between a ¼ inch to ½ inch thick. Using any cookie cutter of choice, start cutting them out. Place each one on the cookie sheets. With the remaining dough, roll it back into a ball and then roll it out again. Bake for about 7 to 10 minutes. They should only have a slight browning on top. Take out of the oven and let cool in pan on a wire rack. When firm enough to handle, transfer each cookie to the wire rack to cool completely. While the cookies are cooling, start your icing. In a medium mixing bowl, add sifted sugar with water or milk. Whisk. Add in vanilla and salt. Whisk until nice and smooth. If needed add more liquid. When smooth, add food coloring. A little at a time for the desired color. Frost with a small offset spatula, butter knife, or small rubber spatula. You can also put the icing into a zip-lock bag and cut a small hole in the corner and ice the cookies that way. While still wet, add the sugar pearls if using.
