    We first came across this cake hack from content creator Jess Filippo of @mykitchencupboard, who got the idea when she sampled a strawberry olive oil cake at a fancy olive oil shop. "They said that all they did was replace the oil that it (the boxed cake mix) calls for with lemon olive oil," Jess explains in her Instagram video. We are big fans of boxed cake mix upgrades here so naturally, we were immediately locked in.

    Adding olive oil is great because it adds an extra layer to texture and flavor to the boxed cake mix equation. Thanks to olive oil, you will have a cake that stays moist and tender for days on end—that is, if the cake isn't devoured in a day. Using olive oil instead of a neutral oil or melted butter also turns boxed cake mix into a dessert you will feel more inclined to serve as the sweet cap to a dinner party.

    How to Make Boxed Cake Mix with Olive Oil

    First, grab a box of strawberry cake mix. Next, replace the the amount of oil or melted better called for on the back of the box with an equal amount of olive oil. If the directions say to add 1/3 cup of vegetable oil, add 1/3 cup of olive oil. In her video Jess uses Brightland's Lemon Olive Oil, but that's not widely available in every grocery store. If you want to imbue your cake with a zesty punch of lemon through a simpler route, just add in lemon zest and lemon juice to the cake batter! Once you add in the olive oil and the optional lemon, bake the cake as directed.

    For an extra touch, layer the cake with fluffy frosting like Jess does. The cake would even be wonderful with a dusting of confectioners sugar or a simple glaze. If it were up to me, I would serve this strawberry lemon olive cake with dollops of whipped cream with sliced strawberries and an extra drizzle of olive oil for good measure. 

    But why stop at just strawberry boxed cake mix? This olive oil cake cake can be made with almost any cake mix flavor you like. Yellow, lemon, or chocolate boxed cake mixes will all bode well with the richness of olive oil.
