There’s something magical about chocolate cake. Rich, decadent and utterly irresistible, it’s the dessert I can never get enough of. I’m always on the lookout for the best chocolate cake recipes—ones that deliver that perfect balance of moistness, richness and deep chocolate flavor.
There are many styles of chocolate cake—light and fluffy, rich and fudgy, pudding-like chocolate lava cakes—but what we're always looking for is a bold chocolate flavor. Depending on the chocolate cake, a creamy chocolate frosting is the perfect finishing touch.
As we were scrolling social media, a different kind of chocolate cake caught our eye, thanks to Christopher Kimball, the legendary food editor and founder of @177milkstreet. He shared the recipe for Swedish "Sticky" Chocolate Cake (also known as kladdkaka) and we were instantly intrigued. It looked rich and delicious and comes together in one bowl. Here's what you need to know.

According to Epicurious, kladdkaka (pronounced klah-ka-ka) is "one of the most famous fika cakes in Sweden." What's a fika, you ask? The simple answer is that it's a Swedish coffee break, but it's actually more of a way of life. Fika, which is a noun and a verb, is a way Swedes carve out moments to sit and relax during the day. There's often a fika in the morning and afternoon, where you step away from your desk and get a coffee and a little snack. This can be a solo venture or something you do with friends or family. Sounds so civilized, right?
But back to kladdkaka. The rich, sticky chocolate cake is a common fika snack. Home cooks and cafés all have their preferred versions. One of the keys to getting the cake right is that it should be very moist and sticky inside but not runny. It's somewhere between a lava cake and a rich, super-fudgy brownie.
Kladdkaka is also easy to make. How easy? "Easy enough to make on a work-from-home lunch break," according to Kimball. Sign us up!

How to Make Kladdkaka (Swedish Sticky Chocolate Cake)
This cake is a "seven-ingredient dump-and-stir" that bakes in about half an hour. You can get the full recipe on the Instagram post, but here's the gist.
You start by browning butter, which is a very good place to start, if you ask us. Next, dump in some cocoa powder and brown sugar in the pan with the brown butter and whisk the mixture until it's smooth. Transfer the chocolate mixture to a bowl to cool.
Once the chocolate mixture is cool, whisk in 4 eggs, then mix in salt, flour and chocolate chips. Transfer the batter to a springform pan and bake in a 325° oven until the edges of the cake are cooked and just set. This cake is intentionally undercooked, which gives the treat its signature sticky texture and an intense chocolate flavor. Let the cake cool slightly, then remove the sides of the pan. To finish the cake, dust it with cocoa powder.
We love the look of this simple cake. It's easy and elegant and we think it would make a great addition to our holiday table—or our next coffee break.
