That’s why so many of us grab the boxed kind from the freezer aisle, but cookbook author, pro baker and podcast host Jessie Sheehan (@jessiesheehanbakes) shared a game-changing hack that makes homemade ice cream sandwiches not only doable, but kind of genius and we immediately added it to our summer must-make list.

The trick is softening the ice cream, spreading it in a parchment-lined 8-by-8-inch pan and refreezing it. Spreading the ice cream in the pan makes it the perfect thickness for sandwiching between two chocolate chip cookies and the parchment paper helps you lift the square of ice cream out of the pan in one piece. Cut out rounds of ice cream using a biscuit cutter or a large round cookie cutter for uniform discs of ice cream. It’s one of those tips that makes you wonder why you didn't think of this sooner.
Pro Tips for Making the Ice Cream Sandwich of Your Dreams
Once you’ve got the base method down, you can level up your ice cream sandwich game even further with a few smart tweaks.
Second, be sure to work fast when assembling. Even with pre-cut rounds, you want to move quickly once you start building your sandwiches. Keep the cookies chilled and only take out a few ice cream rounds at a time. Assemble, press and then return to the freezer to firm back up for at least 30 minutes before serving.
Once you/re done, wrap individual sandwiches in wax paper or plastic wrap and store them in an airtight container in the freezer. They’ll stay fresh for up to two weeks, but chances are good they won't last that long.
