This Steamed Haricots Verts in a Lemon Thyme Vinaigrette recipe might sound a little too fancy for a Tuesday night, but I promise it’s super simple. The key is using haricots verts (those elegant, thin French green beans), which cook quickly and have a lovely snap to them. Once they’re blanched, they get tossed in a bright, lemony vinaigrette that’s fresh and flavorful.
Next, mix equal parts fresh lemon juice and extra virgin olive oil. Add a pinch of salt, some cracked pepper and fresh thyme leaves. Shake it all up in a Mason jar (or whisk it in a bowl), and pour as much as you want over your cooled beans. Give it a toss, check your seasoning to make sure it's where you want it to be and finish it off with some lemon zest and a few thin lemon slices. Voilà! that's all it takes!
