SAN DIEGO – Summer is a great time to bring out the fresh ingredients, light up the BBQ, and savor time with family and friends. Here are a few super quick recipes to inspire.
Corn Bean Salad with Heat! ~7 minutes
Ingredients: Whole Foods organic cooked corn kernels, cooked kidney beans, red onion, cayenne pepper, goat cheese with herbs, fresh basil, Whole Foods or Costco balsamic, olive oil.
Tools needed: Medium-sized mixing bowl, 2 large spoons, sharp knife, cutting board, 2 serving bowls.
Prep and serve: Mix 1 cup each of corn kernels and kidney beans with a quarter red onion chopped, mix in 2 shakes of Cayenne pepper, 4 splashes balsamic, 3 splashes olive oil, garnish with a few basil leaves and a small wedge of goat cheese with herbs. Serve and enjoy.

Brit Bangers and Mash My Way….Goal! (Photo by Margo Schwab/Special to La Jolla Village News)Ingredients: Whole Foods or Costco 4 cooked chicken sausages, 1 sweet potato, sour cream, honey, Dijon mustard, parsley (mine’s from the garden).
Tools needed: BBQ with tongs, or cooking pot with spoon to heat sausage and potatoes, small mixing bowl, small spoon, small whisk, 2 plates.
Prep and serve: Heat sausage on grill or in pot on stove with water, cook 1 sweet potato either way, if on grill, try to precook potato and then grill, while cooking or in advance whisk in mixing bowl 6 heaping tablespoons sour cream, 1 heaping teaspoon Dijon mustard and 1 tablespoon honey. Slice the potato and place around 1 or 2 sausages on each plate. Liberally heavy drizzle sauce and garnish with parsley — cheers!
Berry Good S’mores ~10 minutes max
Ingredients: Whole Foods non-GMO gingerbread crackers, vegan marshmallows, dark chocolate bar, strawberries.

Prep and serve: Cut 2 large strawberries into thin slices, place Graham cracker broken into 2 squares on each plate, place a square inch or so dark chocolate on one cracker each plate, BBQ skewer 2 marshmallows and brown slightly on outside, (alternative melt on low heat chocolate and marshmallows until soft) place marshmallows on chocolate and top with sliced strawberries. Place the second Graham cracker on top, squish slightly – enjoy!
