Get ready, San Diego — things are about to get very pink.
The Malibu Barbie Café is heading to town this summer, bringing along a splashy dose of 1970s beach vibes, retro roller skating, and a full-on Barbiecore dining experience. The pop-up, a collaboration between experience-makers Bucket Listers and toy giant Mattel, opens July 11 at Bayside Kitchen and Bar.
Yes, there will be food. Yes, there will be roller skates. And yes — of course — it will be unapologetically Barbie.
If you’ve seen this café pop-up in cities like New York, Chicago, and Miami, you already know what to expect: colorful, nostalgia-heavy decor, themed food and drinks, and plenty of photo ops. San Diego’s version is landing just in time for Comic-Con, and it’s pulling out all the stops.
Derek Berry from Bucket Listers, the man behind Saved by the Max and The Golden Girls Kitchen, is leading the charge. “Barbie is an icon,” he said. “We’re just happy to throw her a proper West Coast party.”
The café will serve a casual, all-day menu created by MasterChef finalist and Chopped champion Becky Brown, plus desserts and specialty drinks. In between bites, guests can hit the roller rink, shop limited-edition merch, or join in on special events like cupcake decorating, paint parties, and adults-only skate nights.
Bonus: $1 from every skate rental goes to the American Red Cross to help those affected by California wildfires.
