The Beau Hotel will unveil its newest addition—The Bar at the Beau, officially opening on Friday, May 16.
Located inside one of the Gaslamp Quarter’s most iconic buildings, this new restaurant and bar pays homage to the past while offering a modern take on dining, cocktails, and hospitality.
Originally constructed in 1886 as the Leland Hotel, the property has lived many lives—from a Prohibition-era speakeasy to its current identity as The Beau Hotel. Today, the building’s rich history is proudly on display: original brickwork from Coronado’s PB&Y Company lines the walls, and the historic 1886 bar still anchors the room. There’s even talk of a friendly ghost who hasn’t quite checked out, adding a touch of lore to this beautifully restored space.
The Bar at the Beau offers a full-day menu curated by Executive Chef Robin James, a San Diego native with a passion for inventive, elevated comfort food. Chef Robin—most recently Executive Chef at Top of the Market—draws from local roots and fine-dining experience to reimagine classics with a creative twist. Signature dishes include Duck Pot Pie, Braised Pork Shank, and Whole Roasted Branzino, alongside seasonal plates like Beef Cheek with crispy chickpeas and a refreshing Chilled English Pea Soup. Guests can finish with playful desserts like the Beau Sundae or a Pineapple Upside Down Cake reimagined with flair.
The cocktail program is just as inspired. Sip on the 1886 Old Fashioned—a timeless blend of bourbon, sugar, and bitters—or try the Beau Bloom, a floral gin sour with lavender syrup and lemon. For something bold, there’s the Night Porter, an espresso martini that nods to the building’s after-hours history.
Overseeing the guest experience is Brandi Evans, Director of Food & Beverage, whose resume includes leading VIP operations for the San Diego Padres and Del Mar Thoroughbred Club, as well as high-profile hospitality launches in Las Vegas. Her leadership ensures each visit to The Bar at the Beau is thoughtful, memorable, and distinctly personal.
The vision behind the project comes from Cathy Herrick, preservationist and founder of San Diego Historic Properties, Inc. With over 30 years of experience restoring nationally recognized historic buildings, Herrick has breathed new life into this Gaslamp gem while honoring its original character. Her dedication to meaningful, story-driven hospitality is felt in every corner of the space.
