Martha Stewarts's Top Easter Sugar Cookie Tips, Tricks and Advice

Cheers to cookies! One interesting addition to Martha's Easter sugar cookies is some cognac or brandy. She says that the spirit helps prolong the life of the cookie and also "makes them taste really good."

Chill outThis can apply to the cook, but we're mainly talking about the dough here. In Martha's recipe, you chill the dough three times: after you make it, after you roll it out and also after you cut out your shapes. All of this chilling ensures that you get clean cutouts and that those bunnies and chicks and eggs hold their shape as they bake.

A cut aboveWhen you're cutting out the cookies, Martha says, "Take away the negative. Lift up the positive." While that could also be pretty darn good life advice, Martha was referring to removing the dough from around your cutout (the negative) before lifting up your cutout (the positive) with your hands or a spatula and transferring it to a parchment-lined cookie sheet.

The Decorating

If you aren't planning on using the icing immediately, stretch a layer of plastic wrap directly on the surface of the icing to prevent the top from forming a crust. Once you're ready to start decorating, simply stir the icing to restore the smooth consistency. Martha says the icing should have the texture of "wet yogurt." You want it to be thin enough for dipping and piping but not so loose than it oozes right off the cookie.

Holding the cookie face down, lower it into the soft royal icing to coat the entire surface of the front of the cookie.

2. Dripping

Jazz up your cookies with lines, dots or swirls of color. If you're working with an animal cookie, you can add dots for eyes and small lines for feet to make baby chicks. 4. Drying
