So… What Is Tofu, Really?
Tofu is made by curdling fresh soy milk, pressing it into a solid block and then cooling it. It’s kind of like how cheese is made from dairy milk. You’ll find different varieties and each has its place. For example, silken tofu is great for smoothies and sauces; firm and extra firm tofu are best for stir-fries or grilling. So how do you marinate it?
Just remove the tofu, press it to remove excess water and pat it dry with a paper towel. Then, pour the marinade in the tofu container, place the dried tofu back in and add more marinade on top. Cover the container and let it sit for at least 30 minutes.
