Next, line a baking tray with parchment paper and sprinkle on a thin rectangle of shredded cheddar cheese. This forms the base of your “bread.” Arrange your pickle slices close together to form a rectangle on top of the cheese. Add a little seasoning if you want, then sprinkle just a bit more cheese on top.Repeat the process to make a second “slice” of "pickle bread," so you have a top and a bottom for your sandwich. Bake your "bread" at 400° for about 20 minutes, which is about how long it should take for the cheese to get golden brown and crispy. Let it cool just enough to handle, then gently peel the cheesy flatbreads off the parchment.
Switch It Up With Zucchini
If you’re in the mood for something slightly different, try using zucchini instead. It’s still low-carb, gluten-free and totally delicious! The process is the same as above, but you'll need to use a large zucchini and slice it thinly using a mandoline or vegetable peeler. From there, repeat the same steps as the pickle version.
