Shopska salad was originally created in the 1950s by a state-run tourism agency to highlight Bulgaria’s fresh produce and encourage a national cuisine. The name "Shopska" comes from the Shopluk region in western Bulgaria, and the salad was meant to represent the national flag: red (tomatoes and peppers), green (cucumbers) and white (sirene cheese).

How to Make Traditional Shopska Salad

You can get Logan's recipe on his page, but for a traditional Shopska salad, you'll need chopped tomatoes, peeled and chopped cucumber, chopped roasted red peppers (jarred is fine), finely sliced or diced red onion, extra virgin olive oil, red wine vinegar (optional), salt and pepper and grated sirene cheese or good-quality feta. (Look for a block of feta vs. crumbled feta.) You can also add fresh parsley for garnish.

That’s it! It’s easy, quick, and perfect as a side dish, light lunch or even a party salad. And you’ll want to make extra because it only gets better as it sits.

Like most great dishes, Shopska salad has evolved into many forms. You can add olives or capers for a briny punch, or swap the roasted pepper for raw green pepper if you like a little crunch. Top with a drizzle of balsamic glaze for a sweet-savory twist and add chopped hard-boiled eggs to make it more filling. Try it with grilled chicken or shrimp for a protein-packed meal.
