A revamped menu, new management, building improvements and a “new, fresh vibe” await customers for the reopening Tuesday of Luna’s Tacos and Tequila in downtown Greeley.
The made-from-scratch Mexican restaurant announced the reopening through social media and emails this week. Owners Brian Seifried and Samantha Corliss of the Centennial Hospitality Group confirmed the reopening date is no April Fool’s Day joke.
“The one thing we don’t joke about is tacos and tequila,” Seifried. “We thought it’d be a fun day to start, it’s Taco Tuesday and the stars aligned for April 1.”
The restaurant reopens at 11 a.m. Tuesday. The first 250 guests will received four free street tacos.
Tuesday is also the first anniversary of the Windsor location at 1246 Automation Drive. Next weekend, both Luna’s locations will offer a buy-one-get-one-free deal on margaritas.
The Greeley Luna’s opened in 2018 at 806 9th St. The Luna’s ownership group announced the temporary closure of the Greeley restaurant in late January. At the time, Seifried and Corliss said they did not know the length of the closure. The owners and the restaurant needed a pause to reenergize, refocus and rejuvenate.
Since then, the 120-year-old building has seen some changes: new flooring, painting, work in the kitchen and behind the scenes, and the addition of televisions and improved meeting space upstairs for private parties and events. There is a hope that Luna’s might be a place to watch the Denver Broncos this fall.
Seifried said the restaurant will have a new food menu, fresh juices and additions at the bar. There is also a new staff and management. The chef is Jose Ramos. The general manager is Irwin Marquez, and Bradley Nelson is the operations manager. Nelson oversees both locations in Greeley and Windsor.
“Hopefully, they’ll (customers) notice a fresh, new vibe here,” Corliss said. “It’s still going to feel like the same old Luna’s but a little fresher and more vibrant than what it was.”
Seifried and Corliss are working on a new venture — opening a new Wing Shack location. The group is consolidating its 9th Street restaurant into the former Kenny’s Steakhouse site at 35th Avenue and 10th Street. Seifried said the restaurant — the biggest Wing Shack of all — is expected to open before the end of April.
Around time of the temporary closure of the Greeley Luna’s earlier this year, there was concern in the downtown business community about the future stability of the area. Weld County announced an interest in moving courthouse operations out of downtown and to a site off O Street, citing lower costs. The courthouse and the traffic it generates are major sources of business for downtown merchants.
The Greeley-based Richmark Development Company has since issued plans to preserve and improve the downtown by building a campus of new facilities for the Greeley-Evans School District, the city of Greeley and the county.
The county continues to evaluate its options, announcing the hiring of two firms earlier this week to conduct further studies on the associated costs.
As a downtown business owner, Seifried said his thoughts on the matter are not materially different from two months ago when Luna’s closed. Seifried said he and Corliss considered not reopening the downtown Luna’s and possibly moving the restaurant to the west side of Greeley, which could be a future hot spot if Windsor developer Martin Lind’s West Side Project becomes a reality.
“I hope the community steps up and lets commissioners know that we feel Greeley and downtown Greeley is the heart of Weld County and has been, and I hope the county will make the decision to be part of downtown,” he said. “I hope county employees and judicial employees speak up and express that and a belief in the DDA (Greeley Downtown Development Authority) and (Executive Director) Bianca Fisher, in UNC and (President) Andy Feinstein and in (City Manager) Raymond Lee and the city of Greeley, and in the Richardsons, obviously. The revitalization of downtown takes time.”
