To make them, wash your potatoes, season the skins and bake them. Once they are soft, open them and scoop out the fluffy insides. Then, brush the inside of the hollowed-out potatoes with melted butter and air fry the skins.
Air frying the potato skins first ensures they get golden and crisp, creating the perfect base for all that gooey, sharp cheddar goodness. Shred your cheese and when the potato skins are done, fill them with extra sharp white cheddar and cook them a little longer in the air fryer, until the cheese melts.
Kick Them Up a Notch
To take them to the next level, top your cheesy potato skins with your favorite toppings, like sour cream and green onions or go for something a little different, like sundried tomatoes for a tangy twist. The beauty of potato skins is their versatility—you can load them up however you like!
I would love to make these topped with cheddar, barbecue sauce and pulled pork or spoon some chili on top of them. Yum!
