How to Make Boxed Cake Mix with Olive Oil
First, grab a box of strawberry cake mix. Next, replace the the amount of oil or melted better called for on the back of the box with an equal amount of olive oil. If the directions say to add 1/3 cup of vegetable oil, add 1/3 cup of olive oil. In her video Jess uses Brightland's Lemon Olive Oil, but that's not widely available in every grocery store. If you want to imbue your cake with a zesty punch of lemon through a simpler route, just add in lemon zest and lemon juice to the cake batter! For an extra touch, layer the cake with fluffy frosting like Jess does. The cake would even be wonderful with a dusting of confectioners sugar or a simple glaze. If it were up to me, I would serve this strawberry lemon olive cake with dollops of whipped cream with sliced strawberries and an extra drizzle of olive oil for good measure.
