I recently ran across this recipe from one of our favorite food content creators, Diane Morrisey (@dianemorrisey) and I knew it was the recipe for me. Diane is a mom of six, like me, so she knows quick, delicious and nutritious dinners are a must, and fans say this recipe hits all the marks.

Diane lists the full recipe in the caption of the video, but first, you'll mix smoked paprika, garlic powder and salt and pepper and rub that mixture on 1 pound of salmon. Mix Dijon mustard with honey (or use bottled honey mustard) and pour that on the salmon, using a pastry brush to make sure the fish is evenly coated.

As the fish bakes, the panko topping gets nice and crispy and the honey mustard bakes into a sticky glaze. It's crispy and savory and tangy and a little sweet—all the things that we want in a simple weeknight dinner (or any dinner, for that matter).

We bet teriyaki sauce would also make a good glaze. You can also add more or less salt and some pepper or red pepper flakes to give the fish a little heat.
