My most aspirational warm and colorful winter dish? Purple rice. A popular dish in many Asian countries, purple rice is a type of rice known for the its deep purple color. The deep hue comes from the rice's high amount of anthocyanin, the antioxidant pigment also found in blueberries and blackberries.

I always mean to buy purple rice but my kitchen is small so I don't have space for a lot of things, let alone another bag of rice. That got me on a search to find ways to dress up white rice in a way that is colorful, flavorful and nourishing with the ingredients I have in my kitchen.

? The secret is … adding a Japanese purple sweet potato, AKA Okinawa sweet potato! Why? ??? How to Make Purple Sweet Potato Rice

Wash and scrub one small-to-medium size Japanese purple sweet potato. Wash and rinse the rice and add to the bowl of an electric rice cooker. Nestle the sweet potato into the rice and cook using the white rice or quick cook setting on your rice cooker. Once fully cooked, break the potato into smaller pieces right in the rice cooker using a rice paddle or spoon. Stir the potato into the rice and serve.
