All you do is cut out the mini cookies, sprinkle them with decorative sugar, make a simple buttercream frosting and stick them together to create wee sandwiches. Brett's mom also makes spritz cookies, but it was the sandwich cookies that have taken off on social media.

What People Are Saying About Brett's Bites Christmas Cookies
@bkara8899♬ Main Title (From "Elf") - Dominik Hauser
The cool thing about these cookies is that they likely date back to at least the mid- 1950s. "I love that everybody is making these," said one commenter on @k8mckinney's TikTok video. "They first appeared and Betty Crocker’s 1956 cookbook as cream wafers and it was the first time the cookbook came out with butter cookie recipes after the war." We can't confirm all of those facts, but there is a Cream Wafer Cookie recipe on the Betty Crocker website that is quite similar to Brett's.
For her part, @k8mckinney thought the recipe was worth the time and effort. "They were so good," she said. "Definitely have to eat them cold."
The plot thickens! Is this a cookie you'd try or not so much?
