Japanese Ramen restaurant Ippudo goes vegan at new West Hollywood location ...Middle East

Internationally renowned Japanese ramen restaurant chain Ippudo has gone vegan at its newest location in West Hollywood.

Known for its traditional noodles and rich slow-cooked Tonkotsu pork broth, the restaurant, which has 140 locations in Europe and Asia as well as places in New York, San Francisco and Culver City, opened Ippudo V, a fully vegan restaurant on Sunday, May 11.

“Ippudo philosophy is to be innovative, and that means keep changing, keep challenging ourselves,” said Ryota Yano, president and CEO of Ippudo. “And the vegan ramen is a big challenge for us,” he added.

The new 1,560-square foot restaurant has 30 seats inside and 26 on the patio. It’s located at 8352 Santa Monica Blvd., and it’s the chain’s second fully vegan restaurant, with the first opening in Brooklyn earlier this year.

While Ippudo is known for sticking to tradition, the vegan spot will use some innovative techniques to offer customers the flavors they have become known for, Yano said.

Customers can expect vegan dishes like the Pla-Ton, Ippudo’s plant-based take on Tonkotsu, the Shojin, a traditional shoyu ramen made with a broth extracted from Hokkaido Rishiri kelp and Kyushu dongko shiitake mushrooms, and the Hakuna Matata, which swaps wheat noodles for house made carrot fettuccine paired with spicy miso and a 48-hour-marinated mushroom tsukudani. Also on the menu is the Toma Tan Ton, a Shio ramen with a starchy sauce made from tomatoes and vegetables.

Yano hopes that even the hardiest carnivores will dig into these vegan offering.

“With the taste and the flavor, I believe no one will be able to tell this is vegan ramen. I believe they will not be able to know the difference,” he said.

Also on the menu are vegan sushi rolls including the Matilda with LEON, a marinated beet roll paired with cucumber, vegan mayo and herbs, as well as the Super Mario Bros with mushroom and asparagus tempura, marinated carrots and red cabbage drizzled with teriyaki sauce.
