Gellar recently went on The TODAY Show, where she showed Jenna Bush Hager and guest host Tiffany Haddish how to make her go-to protein-packed recipe, calling it one of her favorite summer dinners. It’s pantry-friendly, full of fiber, easy to meal-plan and kid-approved. This colorful, healthful salad checks all the boxes.

Don’t let the word “salad” fool you. Sarah Michelle Gellar's dish is hearty and satisfying, thanks to a trio of quinoa, chicken and chickpeas. The base is quinoa, which Gellar reminds cooks to rinse before cooking to remove its naturally bitter coating. While the quinoa is on the stove, Gellar seasons chicken thighs with garlic powder, onion powder, oregano, salt and pepper, then pan-cooks them with a squeeze of lemon at the end for a hit of brightness.

To build out the salad, Gellar adds crunchy cucumbers, cherry tomatoes, bell peppers, briny olives, fresh cilantro, chickpeas for fiber and plant-based protein and a sprinkle of crumbled feta. It’s the kind of salad that's light and fresh but also satisfying.
